Mini Bubbacue Meatloaves

INGREDIENTS

3/4 CUP MILK

1/2 CUP OLD FASHIONED OATS

1 YELLOW ONION, FINELY DICED

1 TBSP. OLIVE OIL

1/2 TSP. SALT

1 EGG, LIGHTLY BEATEN

1 LB. LEAN GROUND BEEF OR TURKEY

2/3 CUP KETCHUP

1 1/2 TSP. PREPARED MUSTARD

2 TSP. HUBBA BUBBACUE

 

Directions:In large bowl, pour milk over oats, set aside. Cook onion in the oil with salt until soft and let cool. To the oat mixture, add egg, 1 tsp. Hubba Bubbacue, ground meat and onions and gently mix together. In a separate bowl, mix ketchup, mustard and remaining tsp. of Hubba Bubbacue. Divide the meat mixture into a 12-cup muffin tin. Spread the ketchup mixture on top of each meatloaf. Place the pan on a sheet pan to catch any drips and cook in a 350-degree oven for approximately 35-45 minutes.
