Daddio Feta Bake

INGREDIENTS

1 bunch broccolini, ends trimmed, cut lengthwise if stalks are thick (asparagus can be substituted if you can’t find broccolini)

2 cups halved grape tomatoes

2 shallots, thinly sliced

4 TBSP. Olive oil

3 teaspoons Dip Me Daddio spice blend

16-ounce block of feta cheese, cut in 1/2 inch slices

1/3 cup balsamic vinegar

 

Directions: Preheat oven to 400 degrees. On sheet pan, combine broccolini, tomatoes, shallot, 3 tbsp. Olive oil and Dip Me Daddio. Toss until veggies are coated with oil and spices. Clear space among veggies and place feta slices on the pan. Place pan in oven in lower third of oven and roast for 15-20 minutes until vegetables begin to brown. While vegetables are roasting, place balsamic vinegar in small sauce pan and set on simmer until it is reduced by half and is a syrupy consistency. When vegetables have started to caramelize, remove pan from oven and drizzle with remaining 1 Tbsp. Olive oil and the reduced balsamic vinegar. Serve feta, vegetables and pan juices over pasta, rice or any other hearty grain.
