This dry rub makes tender, deeply flavorful pork chops. The combination of coffee, anise and smoked paprika doesn’t overwhelm and truly complements the flavor of the pork.
6 TBSP. TABLE SALT
6 TBSP. SUGAR
3 LBS. BONE-IN PORK CHOPS
1 TBSP. JAVA JIVE RUB
Directions: Dissolve salt and sugar in 3 quarts cold water. Add pork chops and refrigerate for 2 hours. Remove chops from liquid and pat dry. Rub both sides of chops with Java Jive. Grill on barbecue or stovetop grill pan until meat thermometer in center of chop registers 140-degrees. Let chops rest under foil for 5 minutes.
