Groovin’ Spinach Salad

Instead of boring old croutons, liven up your salads with the delicious crunch of our no-added fat Groovin’ Granola.


1 lb. strawberries, cleaned and trimmed
1 cup white balsamic or champagne vinegar
3 tbsp. olive oil
5 oz. baby spinach
3/4 cup Groovin’ Granola

DIRECTIONS: Pulse half pound strawberries in food processor until finely chopped. Transfer to bowl with vinegar, let sit for one hour, strain through sieve, discard solids. Whisk together 2 1/2 tbsp. strawberry vinegar (store remainder in refrigerator), olive oil, 1/4 tsp. salt and 1/8 tsp. pepper. Put spinach, remaining strawberries, sliced, in a large bowl. Drizzle dressing over top and sprinkle salad with Groovin’ Granola before serving.
