This classic dish gets a rustic Italian makeover with our Funky Fennel spice rub. A little sweet. A little tangy. And a lot of yum.
INGREDIENTS
3-4 lb. pork loin roast
1 large granny smith apple, sliced
1/4 cup honey
4 tsp. Funky Fennel
4 large yellow onions, sliced
DIRECTIONS: Mix honey and Funky Fennel, set aside. Slice 4 or 5 two-inch deep slits in the top of the pork and place slices of apple in the slits. Place two thirds of the onions in a slow cooker and place pork on top of onions. Drizzle honey and Funky Fennel mixture on top of pork. Scatter remaining onions and apples on top of pork and cook on high approximately 6 hours. Remove pork from slow cooker to a serving platter, then remove onions and apples. Transfer pan juices to a saucepan and simmer until reduced by half, serve the sauce with pork and apples.
