This is the burger my husband requests for Father’s Day each year. Get your Greek on by serving it with tzatziki sauce in pita bread instead of plain old ketchup and a bun for a sweet & spicy tang.
1 LB. GROUND LAMB
1 TBSP. COOL CAT COCOA
4 SANDWICH SIZE PITA
1 MED. CUCUMBER, PEELED, HALVED LENGTHWISE & SEEDED
1 CUP PLAIN WHOLE MILK GREEK YOGURT
2 TBSP. EXTRA VIRGIN OLIVE OIL
1 TBSP. FINELY CHOPPED MINT OR DILL
1 SMALL GARLIC CLOVE, FINELY MINCED
Directions: Mix ground lamb and Cool Cat Cocoa. Form into four thin patties. Shred cucumber on large holes of a box grater. Whisk yogurt, oil, mint and garlic together in a medium bowl. stir in cucumber and season with salt and pepper. Refrigerate one hour. Grill burgers to desired doneness and serve on pita bread, topped with yogurt sauce.
