This is a real easy way to get that summertime barbecue flavor anytime of the year. This is my reinterpretation of a Southern style rub that delivers a big time smoky, spicy taste.
8 cups water, plus 2 tbsp.
3/4 cup kosher salt, plus 1 tsp.
3/4 cup brown sugar
3/4 cup white vinegar
3 tbsp. Hubba Bubbacue
2 large bone-in, skin-on chicken breast halves
Directions: In large container, mix together water, ¾ cup salt, brown sugar, vinegar and 1 tbsp. Hubba Bubbacue. Add chicken and refrigerate 2-4 hours. Pre-heat oven to 350-degrees. Remove chicken from brine and pat dry. Combine 1 tsp. salt and 2 tbsp. Hubba Bubbacue and rub all over chicken before transferring to roasting pan. Add 2 tbsp. water to pan and roast approximately 45 minutes until meat reaches 160-degrees on meat thermometer.
